G is for…Greens

I love leafy greens – my staples are spinach, broccoli, kale and (my absolute fave) brussel sprouts! Greens are fabulous because they have a ton of nutrients including vitamins A, C and K – in fact kale has over 1000% of your RDA for vitamin K in just 1 cup – wow! Call me strange but I also love the taste (I’m a rabbit at heart) – the vague bitterness and earthy taste – greens make a fabulous base to any meal. Yes, even breakfast when spinach (or even kale) can be used to make a smoothie like this one.

Today I’m going to be sharing my plantPOWER recipe for roasted Garlic brussel sprouts (extra G in there!), these are delicious and the perfect compliment to some quinoa and tomato lentil sauce!! Also perfect for the Green in a tone it up M5 (us TIU gals love our sprouts!)

Garlic Brussel Sprouts

serves 1

  • 1 cup brussel sprouts
  • 1tsp – 1tbsp olive oil (depending on how much fat you want – I recommend the higher end)
  • 1 crushed garlic clove
  • 1 tsp maple syrup (gives a delicious flavour)

Preheat oven to 180 C. Combine ingredients in bowl. Bake for 30-35 mins. Enjoy.

This is so simple it shouldn’t even be called a recipe!

    I’m loving being involved in the #plantPOWER challenge this month!
    It’s been so much fun tweeting all over the place with my piccies, and it’s also really encouraged me to add more plant-based foods to me diet, which can never be a bad thing really. ;)

    My favourite green veggies would have to be brussel sprouts, broccoli and spinach;
    and the next thing I really want to try is kale!
